Jersey/New York Hot Onions (modified Sabrett's recipe)

One thing I really miss about home are the dirty water dogs (actually just cooked in beef broth for that distinctive flavor,) you could buy from food trucks or hot dog wagons. Sabrett's and Nathan's were by far the best, but when you were hungry, any hot dog would do. This is one way to do it, aside from using the previously mentioned secret. Goes really well with mustard and home made hot dog chili.

1 tbsp olive oil

2 med onions, thin sliced (mandolin is best)
1/2 cup crushed tomatoes
tbsp honey
1.5 tsp cornstarch
.5 tsp salt - kosher
pinch red pepper flakes
1/4 cup vinegar
about a tsp. of hot sauce
beef stock 

Heat oil and sauté onions.
Add tomatoes, honey pepper flakes, vinegar, and salt
and simmer.
Add cornstarch, simmer till rendered.

Best served on the mentioned brands, but if you can't get them, try European style wieners or ball park style hot dogs.
